Minted Mushy Peas

A knob of butter
1 tin of Marrow-fat peas
A large sprig of mint
1 lemon
Sea salt
Black pepper
Method
Melt the butter in a saucepan over a medium/high heat and
add in the peas. Finely chop the leaves from the sprig of mint and add them to
the saucepan, give it a good stir then pop a lid on the saucepan and allow to
simmer for 10 mins.
Add a good squeeze of lemon juice along with a pinch of salt
and a generous pinch of black pepper to taste. Give the whole pot a good mash
up with a potato masher until thick and creamy.
